Whole Wheat Pumpkin Spice Bread

Ingredients

1 1/2 cups whole wheat flour

1/2 cup oat flour (or all purpose flour)

1 teaspoon baking soda

1/2 teaspoon baking powder

1 1/2 teaspoons cinnamon

1/2 teaspoon nutmeg

1/2 teaspoon salt

1 teaspoon vanilla extract

1 cup canned pumpkin

2 eggs

1/2 cup maple syrup

1/2 cup melted coconut oil

 

Procedure

  1. Preheat oven to 350°F. Lightly grease a 9”x5” loaf pan with non-stick cooking spray, coconut oil, or butter.

  2. Add all dry ingredients (flour through salt) into a large mixing bowl and mix to combine.

  3. Mix all wet ingredients (vanilla through coconut oil) in a smaller bowl.

  4. Add wet ingredients into the dry ingredients and mix until just combined.

  5. Pour batter into prepared loaf pan and spread around so it is even. Bake uncovered for 45-55 minutes. Test for doneness by sticking a toothpick in the center - bread is done if the toothpick comes out clean. When cool enough to handle, remove from pan and place on cooling rack. Slice and enjoy!

Tip: Pumpkin bread will freeze very well. I recommend slicing it before freezing and wrapping individual slices tightly in plastic wrap to easily remove one slice at a time from the freezer without having to defrost the whole bread.
