Easy Chicken Meatballs

Easy Chicken (or Turkey) Meatballs

Yield: 15 golf-ball sized meatballs

Ingredients

1 lb. ground chicken

1 large egg

1/2 cup breadcrumbs

1/2 cup grated parmesan cheese

1/2 teaspoon garlic powder

1/2 teaspoon salt

Few grinds of black pepper

1 tablespoon olive oil

Procedure

  1. Preheat oven to 400°F. Line a baking sheet with parchment paper.

  2. Combine all ingredients in a large bowl. Mix until well combined.

  3. Form golf-sized balls. Place meatballs on baking sheet as you roll them.

  4. Cook meatballs for 15 minutes. Remove from oven and flip the meatballs. Return to oven to cook for another 10 minutes, or until the internal temperature is 165°F.

 

 

To make spaghetti and meatballs: Cook spaghetti according to package directions. While spaghetti cooks, heat 1 jar of tomato sauce over medium heat – bring to a simmer and lower heat to maintain simmer without boiling. Add cooked chicken meatballs to sauce. When pasta is done cooking, drain and add to sauce. Mix to coat pasta with sauce (I use tongs) and serve! (Recommend topping with grated parm, duh!)
